Last night my mom and I hosted a Stella & Dot Party at my house! My mom went to one last year and had so much fun with her friends, having drinks and shopping all of the cute jewelry & accessories so we thought it would be fun to have one ourselves.
We made some appetizers, lots of wine and I tried out a new recipe for vanilla cupcakes & frosting that were so good that I have to share. I found this on Pinterest, where I find most of my recipes, by Deliciously Sprinkled. Her recipe makes 12 cupcakes but I wanted more than that, so I doubled what I found and made the recipe below.
Here’s what you’ll need:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2teaspoon baking soda
- 1/2 teaspoon salt
- 4 large eggs
- 2 cups granulated sugar
- 1 cup (2 sticks) unsalted butter, softened
- 3 teaspoons vanilla extract
- 1 cup sour cream
VANILLA BUTTERCREAM FROSTING:
- 2 (4 sticks) cups unsalted butter, softened
- 5 cups powdered sugar
- 2 Tablespoons vanilla extract
- 2 Tablespoon heavy whipping cream
- Food coloring (optional)
STEP 1: Preheat oven to 350F degrees. Line muffin tin(s) with cupcake liners.
STEP 2: In a medium bowl, mix flour, baking powder, baking soda and salt. Set aside.
STEP 3: In a large bowl, using an electric or stand mixer (I use my Kitchen Aid) on medium speed to beat eggs and sugar for about 2 minutes, or until light and creamy. Next add the butter and vanilla extract and beat on low speed for about 1 minute, or until well blended. Beat in the dry ingredients on low speed until blended. DO NOT OVER MIX! Add the sour cream and beat until smooth.*I thought the sour cream would be weird but it made them so moist and delicious!
STEP 4: Fill each cupcake liner about 3/4 the way full with cupcake batter. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
*Don’t forget to let the cupcakes cool before you frost them, otherwise the frosting will slide right off.
STEP 1: Mix softened butter on medium speed with an electric or stand mixer. Beat for 30 seconds until smooth and creamy.
STEP 2: Slowly add powdered sugar, heavy whipping cream and vanilla extract. Start on low speed but increase to high speed and beat for 3 minutes.
STEP 3: (Optional) Add food coloring and mix until desired color.
STEP 4: Load frosting into a piping bag with your desired tip. Fill it about half-way (so you don’t squeeze some out of the top by mistake) and start your desired pattern. All I did was use the flower tip and do small dollops around the outside and then worked my way inward until they were covered. Then I sprinkled on some blue crystals and that was all!
